Cast Iron Pan-Seared Strip Steak

My new favorite way to cook steaks, especially a New York Strip steak, is in cast iron skillets with just a few tablespoons of butter, garlic, and fresh rosemary. That’s the recipe I want to share with you here today.

This Cast Iron New York Strip Steak Recipe is foolproof. The truth is that you can use almost any kind of skillet to cook your steaks on top of the stove, but if you want to cook a steak that will be good enough for you to say “Wow! This is so much better than going out!”, then you need a cast-iron skillet. For home cooking and camping, I use Lodge cast iron skillets. They are easy to work with and help create some of the most delicious meals I’ve eaten. They also last forever. I’ve had one for over 20 years.

Here’s what you’ll need for the strip steak recipe:

  • 2 to 3 boneless NY strips, 3/4 to 1 inch thick (about 2 ½ pounds total)
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • Salt and black pepper, to taste
  • 1 sprig of fresh rosemary
  • 1 bunch fresh thyme
  • 2 to 3 cloves garlic, peeled and smashed

What is special about New York Strip Steak?

New York Strip is also called Top Loin Strip or Kansas City Steak. It’s the premium cut from in front of the short loin.

The strip is not only one of the most tender steaks, but also one with a lot of flavor. The marbling keeps it from drying out when cooking and makes for a deliciously juicy steak.

How many calories are in a New York Strip Steak?

A New York strip steak contains approximately 260 calories per 8 ounces. This recipe with its butter and oil has approximately 339 calories per 8 ounces serving.

What’s the secret to a good steak?

What is the best way to cook a New York Strip Steak?

It’s best when cooked with dry heat methods, such as pan-searing, grilling, or roasting rather than with wet heat like boiling or steaming so that you are left with that wonderful crispy outside and tender inside.

Steak cooking tip: Before seasoning and cooking your steak, pat the surface of the steak to remove excess moisture. This will help the steak to brown and caramelize better.

How to Cook New York Strip Steak?

  1. Season the steaks with salt and pepper on both sides. Allow the steaks to come to room temperature.
  2. Preheat the cast-iron skillet over medium-high heat.
  3. Once the skillet is hot, add the olive oil to the hot pan, then the steaks.
  4. Still, over medium-high heat cook for about 2 ½-3 minutes on each side. Position the steak on the side to sear the sides of the steak. This allows you to get a nice sear but still have an inside that is partially rare.
  5. After searing the steak, add the butter, garlic, rosemary, and thyme to the skillet. As the butter melts, spoon the butter over the steak. Continue cooking for 2 to 3 minutes or until you reach the desired doneness.
  6. Remove the steak from the skillet and set aside for 5 to 10 minutes before serving. You can cover it with foil while it rests.
  7. Cut the steak into slices against the grain of the meat. Serve with your choice of sides. Mashed potatoes and steamed vegetables are always a great pairing. Enjoy!

How to Tell When New York Strip Steak is Done?

When cooking steak on the grill or in a pan, cooking time will vary depending on how done you like your steaks. There are some simple signs that you can look for to know when your steak is done just right:

  1. Slightly springy to the touch – if you try to bend it and it bounces back, your steak is rare.
  2. For medium-rare, your steak should be firm when pressed, but will still yield some.
  3. For medium doneness, your steak will feel like the fleshy part of your hand (not tough, but not soft either).
  4. Firm to the touch – if you try to bend it and there’s no bounce back, it’s overdone.

What Can I Do with Leftover New York Strip Steak?

  1. The main thing you can do with leftover meat from a New York Strip Steak is using it in other recipes. This is a great cut of beef to use for sandwiches, tacos, or burritos. You can even use it as a topping on homemade pizza!
  2. Leftover strips also make a tasty addition to hash browns and frittatas.
