Cod fish is mild in flavor, and the fillets are lean meat and, when smothered in the butter sauce, create an unforgettabletaste. The perfect choice for a light and healthy meal.
This cod recipe is spectacular and ready in 15 minutes when cooked in a skillet. The cod fillets are seasoned, then cooked in a tomato butter wine sauce and topped with fresh herbs. Preparing cod fillets in a skillet isreally quick, and you want to make sure everything is measured out and prepped. The fish is completely ready in 15 minutes, so have the table set and your side ready to be served.
seasoning for cod-
This homemade seasoning for fish is a favorite of ours. It brings out the flavors in the rather mild cod and enhances its natural taste.
- Combine the cumin, paprika, garlic, chili and salt and pepper. Generously coat all sides of the cod and set it aside.
prepare tomato butter wine sauce-
- In a skillet, add the cherry tomatoes with the wine and chicken broth and cook until tomatoes start to burst, about 4-5 minutes.
- Add the butter and cook until butter melts; stir sauce as needed. Add the seasoned cod and cook 3-4 minutes per side, flipping once. DON’T OVER COOK the fish. It cooks really quickly if overcooked, it will fall apart and turn to mush. (NOTE: Cook time will slightly vary depending on the thickness of the fillets.)
- Pour the sauce generously over the cod before serving and top with herbs.

No, cod cooks really quickly, and the fillets need to be thawed, or they won’t cook through, and you’ll have raw meat in the center. Thoroughly thaw frozen fish in the refrigerator before preparing the fish.
what kind of wine do I use?
Use any dry white wine for this recipe, I used an inexpensive Chardonnay with great results.
how can I bake this cod recipe in the oven?
This cod fish is excellent when baked in the oven. To prepare cod in the oven, season the fillets and place them in a baking dish. Prepare the wine sauce per instruction and pour over the cod. Cover the casserole with foil and bake for 12-14 minutes, depending on the thickness of the fillets.

Ingredients
cod-
- 1 1/2 lbs fresh cod fillets
- 5 Tbsp unsalted butter
- 1/3 cup chicken broth
- 1/4 cup white dry wine
- 6 oz cherry tomatoes
- herbs chopped (cilantro or parsley)
cod seasoning-
- ½ tsp salt
- ¼ tsp ground black pepper
- ¼ tsp ground cumin
- ½ tsp ground paprika
- ¼ tsp garlic powder
- ¼ tsp chili powder

Instructions
In a small bowl, combine all the ingredients for the seasoning. Combine the salt, pepper, cumin, paprika, garlic and chili powder.
Season cod on all sides.
In a skillet, over med heat, add the broth, wine and cherry tomatoes, cook 5 minutes or until tomatoes start to burst and release juices.
Add butter, cookuntil butter melts, stirring the sauce.
Once butter melts add the cod. Cook over medium/high heat 3-4 minutes on each side, flipping halfway through the cooking. (DON'T over cook the cod.)
Pour sauce over cod. Add fresh chopped herbs and serve.

WOW, this sounded good as I read through, seemed easy and didn’t require that much time, and I just bought cod filets with the intent to add more fish to our weekly meals. This was above and beyond expectations – my husband loved it, said to make note of this and use when we can start inviting friends over for dinner who love fish dishes. I made this using rotel tomatoes (didn’t have fresh ones) drained. Worked out just fine. Flavor was wonderful! Made some organic spaghetti for a side. Went well with the tomato/butter/wine sauce. Nice!

I was happy to order a box of sustainable fish from Alaska. Really great quality, beautiful cod was our first dish to prepare, and your recipe sounded perfect. Well, it was a huge hit! Easy and delicious!
I loved your instructions and pictures provided. Gave me the confidence that I could do this. As others said, the flavors were just right. I loved the acidic pop of the tomatoes. Only change, I sliced 1/2 of an onion and put it into the pan for a couple of mins before adding the wine, broth and tomatoes. We had 2 – 6 oz filets, but I made the full recipe for extra sauciness. We placed the fish and yummy butter wine sauce over some fresh spinach fettuccine. Divoon!
