Today I’d love to present my new Ritz Stuffed Mint Chocolate Chip Cookie Recipe stuffed with chocolate covered Ritz crackers.
I just giggled typing that out.
I saw these babies in the store and I knew, just knew, what I had to do with them – besides eat a handful, of course. I had to bake them into a cookie. I had to take the sweet, the salty,oh the crispy crunch of these goodies and put them inside a mint chocolate chip cookie.
If you are a regular reader you will know that I make mint chocolate covered Ritz crackers every Christmas, so the idea of a chocolate covered Ritz is not a new one to me. This is basically taking my beloved traditional Christmas recipe and making it into a cookie.
I may have snacked on a couple of these while making the cookies. I’m not admitting anything.
When I was making these I wondered if I could just eat it raw and stopped myself. Really, if there ever was a time to eat raw cookie dough folks, this would be it!
These bake up big, beautiful and scrumptious!
If you try only one new cookie recipe this summer, I highly suggest this one! Get those Ritz crackers while you can and bake them into a cookie!

Chocolate Ritz Stuffed Mint Chocolate Chip Cookie Recipe
Mint chocolate chip cookies with a chocolate covered Ritz cracker baked inside. To. Die. For.

Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup butter
- 3/4 cup packed brown sugar
- 3/4 cup granulated sugar
- 1 1/2 teaspoons vanilla
- 2 eggs
- 2 cups mint chocolate chips
- box chocolate covered Ritz crackers
Instructions
Kick the tires and light the fires to 350 degrees.
Cream together your butter and sugar until it's light and fluffy.
Add in the eggs and vanilla, mixing thoroughly.
Beat in the flour, baking soda and salt. When that is done, fold in the two cups of chocolate chips by hand, and prepare to put them on some parchment paper lined cookie sheets.
Making sure there is the same amount of dough on either side of the Ritz cracker, pinch the top and bottom dough together like a dumpling, then smooth and mould into a pretty dome-shaped cookie.
Place on the parchment paper lined cookie sheet and bake at 350 degrees for 15-17 minutes, depending on how thick your cookies are. They will be golden brown on the bottom and top when done. Enjoy!
